One of my all time favourite moments on my retreats is breakfast. After getting up and going into an invigorating qi gong or yoga class, you come out buzzing with energy and a healthy glow feeling genuinely hungry.
This is the perfect warming breakfast as the mornings get cooler here in Mallorca. Polenta has so many health benefits. It strengthens our core, calms our mind and keeps us satisfied for a good while.
A creamy texture is important in order to moisturise our intestines. Polenta can be enjoyed sweet or savoury. Give the following recipe a salty twist by adding some fresh chopped herbs and tomato, olive oil, lemon zest and juice and a dash of ground coriander.
3 tbsp instant organic polenta
1 tsp. finely diced orange peel
2 tbsp creamed coconut (ghee or almond butter if you prefer)
1 tbsp. fresh orange juice
A pinch of Flor de Sal or Himalayan salt
Cardamon and cinnamon
Bring half a litre of water to the boil
Add finely diced orange peel, a pinch of salt and spices
Add creamed coconut (or ghee or almond butter with a pinch of cacao if you don’t like the coconut taste)
Once boiling add the polenta
Keep stirring until it has a creamy texture
Take off heat and add fresh orange juice
Add maple syrup and grated coconut
Top it off with berries, figs, grapefruit or your favourite fruit!
